OAK MASTER® improves the sensory properties of wines and spirits by releasing moderate amounts of the compounds involved in the senses of smell and taste. The organoleptic benefits of using OAK MASTER® infusion enclosures for wine, beer and spirits vary according to the botanical source of the wood, their origin, weight, and the toasting intensity received.
Wine Infusion Closures
OAK MASTER® infusion closures are principally characterized by their antioxidant properties and, thanks to their ellagitannin content, they also help to enhance the wine, beer and spirits structure by increasing the sensation of volume in the mouthfeel, adding sweetness (thanks to the oak's polysaccharides) and help preserve varietal characteristics by absorbing the volatile compounds in the wine that produce undesirable aromas.
The Big Question..
Can we produce the same quality of wine by the traditional barrel ageing and by using OAK MASTER infusion closures?
The complexity of maturation / ageing of the wine, beer and spirits in contact with wood and in an oxidizing environment is such that we can ensure almost categorically that the various aging techniques reported different results in the same wine that has followed the various ageing processes separately. The question is whether the resulting wine, beer & spirits will process quality characteristics, and whether this wine, beer and spirits will gain market acceptance, and if the consumer is willing to pay for it. Clearly, in many blind tastings it has been impossible to distinguish wines, spirits, beers made from different origins and different varieties produced by one method or another. Also this fact is stated in international competitions where wines, at very competitive prices, were made with accelerated ageing systems.
There must also be a strong consideration of the Oak Master system playing a large role in storage reduction and labour costs.
However we do not consider the use of OAK MASTER® infusion as a replacement of the barrel, which is considered the legitimate element in raising high quality red wines, spirits .The use of the OAK MASTER ® infusion enclosures is an innovative, intelligent and educational resource that serves the interest and complexity of young "wines & spirits" and beers, and as such can contribute much to the quality.
